Last night this recipe was on the documentary Engine 2, and so I made it for lunch today and it was very good and fresh.
- I bunch kale (we used red Kale) washed and chopped without stem.
- 1 avocado peeled and seeded
- 2 tsp fresh squeezed lemon
- salt to taste
- 1 tsp garlic powder
- balsamic vinegar to taste (to much can be overwhelming, start with a tsp and the increase for extra flavor.)
Add all ingredients in a bowl and work together with your hands until kale is evenly coated.
NOTE: Tanner made this with romaine lettuce and it was so good, I asked my 6 year old daughter what the best part about dinner was and she said, “That salad daddy made”, I’m sure it was the salad but it may just be daddy.
